Modern Classics with Poor Toms Gin

Amongst the excitement of World Gin Day and Negroni Week we’ve teamed up with Poor Toms Gin for our next cocktail class, showcasing gin’s place in modern classics.
Join us at The Bitters Lab as Hannah Lawson from Poor Toms Gin takes us through the story of Australian gin and explains how a couple of guys in Sydney’s Inner West came to make some of the best gin out there. The class will feature cocktail tastings and discussion of how New World gin can be used in modern classic cocktails at home.
The class includes drinks on arrival, nibbles, and sampling a range of cocktails.

Autumn Cocktails Class with Archie Rose

The Bitters Lab is very excited to announce our next class: “Autumn Cocktails with Archie Rose”.

This class will be an exploration of classic autumn flavours and cocktails, using seasonal ingredients and Archie Rose’s delicious range. Of particular interest will be the use of white sprits in traditionally brown spirit drinks associated with the season.

The exceptionally knowledgeable Nick Baxter of Archie Rose Distillery will be presenting the class, and sharing his knowledge of cocktails, flavours, and spirits, as well as giving us all a taste of Archie Rose’s award winning products!

The class will include a drink on arrival, a variety of cocktail tasters, nibbles, as well as the opportunity to try the entire Archie Rose core range of products.

Upcoming Cocktail Class with Uber Bar Tools!

The Bitters Lab is very excited to announce our next cocktail class: Making the Classics with Uber Bar Tools.

Ever wondered why you might shake one cocktail or stir another? We will be hosting acclaimed bartender Clinton Weir, of Uber Bar Tools, who will be illuminating through his decades of bartending experiences throughout the world why cocktails are made the way they are, exploring different methods, as well showcasing specific techniques and tips to mix your way to a better drink through a series of classic cocktails.

The class includes a drink on arrival, some light nibbles as well as tasters of a number of cocktails which we will be making.

Tequila Cocktail Masterclass with Tromba

Just in time for the warmer weather, dive into the delicious realm of tequila cocktails with our Tequila Cocktail Masterclass with Tromba Tequila! Jason Pitt of Tromba Tequila will be showing off a number of delicious tequila cocktails, highlighting the versatility of tequila, as well as illuminating the history and intricacies of this incredibly unique spirit, and the story behind Tromba Tequila.

The class includes a drink on arrival, as well as tasters of a number of cocktails which we will be making, and the Tromba Tequila range.

Tiki in July

We are very excited to announce out next cocktail masterclass: Tiki in July, a rum cocktail masterclass.

Love Pina Colada’s but find yourself caught in the Melbourne weather more then you’d like? Come fly away with us, as we explore a variety Caribbean classics.

Huw Griffiths of Union Electric and Plantation Rum will be taking us on a tropical journey, showing off a variety of classic Tiki drinks, as well as exploring the history of rum and tiki cocktails.

The class includes a drink on arrival, as well as tasters of a variety of tiki cocktails to help you escape the cold Melbourne winter.

DIY Tonic Masterclass

We’ve have a very exciting class coming up next week, on Thursday 11th May.

This class will be an exploration of quinine, the key component in tonic, and how to make delicious tonic syrup for use in home made Gin and Tonics. The exceptionally knowledgeable Nick Tesar, previously of Gin Palace and Lume, and currently of Bad Frankie and Bar Liberty, will be demonstrating how to make tonic at home, as well as discussing the history of cinchona, quinine and tonic, its uses, and recipes ideas and tricks.

The class will include a drink on arrival, a demonstration of how to make your own tonic syrup at home, as well as recipes ideas. The shop will be open for half an hour following, with DIY tonic kits available for purchase. Never be stuck using sub-par tonic with that beautiful bottle of gin again!

The Yin and Yang of Cocktails with Archie Rose, photos

Here’s a few pictures of our record time sell out cocktail class with Archie Rose, the Yin and Yang of Cocktails! Nick Baxter from Archie Rose took us through a few classic drinks, exploring the changes you can make to these cocktails with small changes, and the mysterious nature of balance in a drink.

This class was so popular, we’l be planning a follow up, to be announced soon!

Whisky Cocktail Class, photos

Following last weeks fantastic Whisky Cocktail Masterclass run by the Bitters Lab and Max Allison, head bartender of Boilermaker House, we felt the need to share a few fun pictures of the event.

Max took everyone through various styles of whisk(e)y, and a range of delicious cocktails, both classic and contemporary. His knowledge and concoctions were a sensation!


febfast Mocktail Class. Last Chance Tickets!

We are excited to host our febfast Mocktail class this Thursday 9th, 6 – 7:30 at The Bitters Lab. Pause for a Cause! By taking part a portion of the tickets go to supporting disadvantaged youth across the country. febfast do fantastic work and we are proud to support them!

Everybody will be able to taste some non-alcoholic thirst quenching mocktails from expert Alex Archibald from Seamstress, one of Melbourne’s classic cocktail bars. Seats are limited. Be fast! You’ll be able to beat the heat and impress your friends this summer. Embrace over brunch, lunch or your next dinner party. Embrace the mocktail!
